Start by filling a large pot with oil heating to 350 degrees.

Wash your fish thoroughly pat down with paper towels after to absorb all the water, (you don't want any water on fish)

Now make some slices on the side of fish going down gently to the bone

Now lightly season as desired. And gently rub into cut cavities with achote paste.

Check oil temperature, slowly insert fish, depending on weight I fried mine between 7-10 minutes,, when cooked thoroughly drain onto a sheet pan with rack.. serve with your side condiments! I made Mexican rice and used my fire roasted salsa recipe and garnished with lines! Enjoy!!
