A condiment i tried with pork roasted with a dusting of truffle salt. It has a sweet, acid and slightly bitter flavour that I thought went nicely with the pork

A condiment i tried with pork roasted with a dusting of truffle salt. It has a sweet, acid and slightly bitter flavour that I thought went nicely with the pork

Peel, core and cut into pieces the apple.

Put in a small saucepan and squeeze the oranges into it.

Add the sugar, cloves and cinnamon and simmer on the lowest flame you can manage; stirring occasionally, until the apple is soft. if it gets dry add a little cold water and bring back to heat.

Mash to desired consistency.
