
Open-Faced Spinach- Bacon Sandwich

Preheat oven to 350°.

In a medium skillet, warm oil over med-high heat. Cook bacon till crispy, cool and crumble.

Return pan to heat and cook spinach in remaining oil until wilted, stirring frequently. ( 3-5 mins).

Spread 1 tbsp. of cream cheese onto each slice of bread. Then top with spinach, tomato, and bacon.

Place slices on a cookie sheet and bake for 10 mins ( or until light brown and warmed through). Enjoy!
