Preheat oven to 400. Defrost pastry till soft and stretch with hands before lightly rolling. Cook potatoes in microwave (makes 4 cups. Brown onions till golden. Add onions, salt, pepper & eggs to potatoes. Roll out pastry and fill along one edge with potatoe filling and pinch ends. Cut off log and use hand to cut roll every 2 inches - pull and pinch to make 6-7 knishes from each roll. Brush with oil and bake approx 15-20 min or till brown. Yields 80

Great Gram Pinkus (Chaika)... Use Strudel Dough: 1 1/2 cup flour-sifted; 1/2 tsp salt; 1 heap tsp baking powder; 2 tsp sugar; 1 egg beaten; 2 tbsp oil; 8 oz water. Mix well and roll out when spongy. Potatoes: Fill 1/2 big pot with potatoes and boil. Add 1 1/2 tsp salt after draining; 1/2 cup browned onions; and oil and mash together. Stretch dough and oil it. Fill one long end and roll into log. Use hand to cut 2 inch pieces, pinch and brush with oil. Kasha Knishes: Add 1/2 cup onions & 1/2 cup potatoe mixture to blend the kasha. Liver Knishes: Fried onions in liver. Rice Knishes: Boil rice in milk, add butter and salt?
