Ingredients

  1. Main Ingredients:
  2. 2.9 lbsbeef short ribs, cut into 2-inch pieces by the butcher
  3. 6dried shiitake mushrooms, soaked in hot water until soft, cut in half
  4. 1 lbcarrots, cut into large chunks about 1 inch thick
  5. 3dried red dates, soaked in hot water until soft
  6. Beef Broth Ingredients:
  7. 8 1/2 cupswater
  8. 2 clovesgarlic
  9. 2 slicesginger
  10. 1/2lemon, cut into large pieces
  11. 1/2onion, cut into large pieces
  12. 1/2apple, cut into large pieces
  13. 1 teaspoonblack peppercorns
  14. 2bay leaves
  15. Marinade:
  16. 1 tablespoonminced garlic
  17. 1 tablespoonchopped onion
  18. 1/4pear, grated
  19. 1 tablespoonsesame oil
  20. 1/3 cupsoy sauce
  21. 1 tablespoonsugar
  22. 1/3 cupbeef broth, from the previous step
  23. Sauce Ingredients:
  24. 1/3 cupbeef broth, from the previous step
  25. 2 1/2 tablespoonsKorean cooking wine
  26. 2 1/2 tablespoonsmirin
  27. 1 tablespoonsesame oil
  28. 2 tablespoonscorn syrup

Cooking Instructions

    Preparation-

    Soak the ribs in cold water for 1 hour to remove the blood.

    Bring a pot of water to a boil, add the ribs, and blanch over medium heat for 10 minutes. Rinse the ribs with cold water.

    Trim the fat from the ribs.

    Make the Beef Broth-

    In a pot of cold water, add all the beef broth ingredients and the ribs. Bring to a boil over medium heat, then reduce to low heat and simmer for 30 minutes. Skim off any impurities during cooking.

    Remove the ribs and marinate in the next step.

    Make the Marinade-

    In a large pot, combine all the marinade ingredients and mix well. Add the beef ribs and marinate for at least 30 minutes or overnight.

    Braise the Beef Ribs-

    In a pot, add the marinated beef and marinade. Add 1/3 cup of the prepared beef broth. Simmer over low heat for 1 hour, then add the carrots, shiitake mushrooms, red dates, Korean cooking wine, and mirin. Cook for 30 minutes to 1 hour.
    Add 2 tablespoons of corn syrup to thicken the sauce, then add sesame oil. Cook for another 10 minutes.

    Garnish with sesame seeds, pine nuts, and shredded fried egg.
