Add the dressing ingredients to the bottom of a 1 pint jar. Mix well. The olive oil to vinegar ratio should be about 2 to 1.

Add cooked quinoa to the jar and mix well with the dressing

Add the raisins.

Add the chopped veggies (red pepper and/or zucchini)

Add the garbanzo beans.

Add the pine nuts.

Add the salad greens to fill the jar. This should be about half of the jar.

Seal the jar and refrigerate until ready to eat.

The salad will last longest if the ingredients over the quinoa are as dry as possible when added to the jar.
