Slice beef evenly into 6 pieces, place each piece on a large sheet of baking paper and fold over the top.

Beat the beef pieces with a meat mallet or rolling pin until very thin. when held up to light, the beef should be thin enough for some light to come through.

arrange meat on a platter

squeeze lemon juice into a bowl and add the same amount of olive oil. add salt and pepper to taste.

pour half of the lemon juice dressing over the meat and set aside.

for the salad, tear all leaves, cut vegetables into ribbons, dress with lemon juice dressing and place on top of beef. serve.
