Soak the lentils in water with baking soda, preferably overnight.

Drain the lentils and rinse them with hot water before grinding. Use a grinder or blender to process them into a dough-like mixture.

Finely chop the seasonings; sauté them and add to the lentil mixture. Mix well and season with salt, ground red bell pepper, and white pepper.

Shape the mixture into croquettes (I made them like burger patties).

Fry in hot oil. Keep in mind they absorb a lot of oil. I also cooked them on a griddle with just a little oil, and they turned out great!

You can use these croquettes to make burgers, or serve them with rice, salads, or any side dish you like. This is how they look when fried!
