Cut the cauliflower into medium flowerettes

Boil the cauliflower in water with the white vinegar with kosher salt. For 5 to 8 min.

Drain the cauliflower and put aside.

(Bechamel sauce) Melt the butter and add the flour, cook with a wisk for 2 min then add the milk. Keep wisking until thickening of the sauce.

Add the salt, pepper and nutmeg (you can also add some cayenne). Cool slightly.

Add the cheese and the eggs into the sauce, mix well!

Arrange the cauliflower on a baking dish, pour the sauce on these. Spread a little cheese on top.

Bake at 180C until golden brown at the top.
