Preheat oven to 350 degrees F. Line a muffin tin with cupcake liners

In a large bowl mix all the dry ingredients and mix well.

Make 3 depressions in the dry ingredients - two small and one large. Pour vinegar in one depression, vanilla in another and vegetable oil in the largest depression.

Pour in water and mix until you get a smooth batter

Fill each cup cake liner 3/4 full with batter. Place in oven and bake for 15 to 20 minutes.

Check cupcakes with toothpick in the center. It should come out clean.

When ready allow to cool for a few minutes, remove from tin and place on a cooling rack. Dust with powdered sugar. Enjoy!
