Pour tomato sauce into a 2 cup measuring cup. Add water to make 2 cups. Pour into medium sized sauce pan. Mix in taco seasoning. Bring to boil and add instant rice. Cover and remove from heat.

Place chopped vegetables, frozen corn and Rotel in a medium fry pan. Cover and set to simmer, stirring occasionally. When vegetables are tender and the rice has absorbed all the water, stir the vegetables into the rice.

Garnish with shredded cheese, if desired.
