  1. 1 tbspOlive Oil
  2. 1Onion
  3. 2Garlic Cloves
  4. 1 tspCurry Powder (I like hot)
  5. 2cm Fresh Root Ginger
  6. 200 gramsTinned Chopped Tomatoes
  7. 400 gramsTinned Mixed Pulses (Drained)
  8. 1/4 gramsSalt (Pinch)
  9. 125 mlHot Water
  10. 2 tbspCorriander

    Heat the oil in a saucepan

  2. 2

    Chop and dice the onion and garlic.

  3. 3

    Add the onion and garlic to the pan and sauté until golden (probably about 5 minutes).

  4. 4

    Stir in the curry powder thoroughly.

  5. 5

    Add the tomatoes, mix, and cook on a high heat for 5 minutes.

  6. 6

    Drain the mixed pulses and wash.

  7. 7

    Peel then grate the ginger root.

  8. 8

    Add the beans and the ginger to the pan. Season with salt to taste and mix together. Cook for 5 minutes

  9. 9

    Add hot water and cook over a low/medium heat for 5 minutes.

  10. 10

    Serve with rice or naan bread and top off with chopped coriander leaves.
