Ingredients

2 servings
  1. 1 lbgreen bananas, peeled, boiled, cooled and cut into chuncks
  2. Brine
  3. 4 cupwater
  4. 2 tbsplemon juice
  5. 1 tbspchive, chopped
  6. 1 tbspcelery, chopped
  7. 1medium pimento pepper, chopped
  8. 1small onion, thinly sliced
  9. 1/2 tbspsalt or to taste
  10. 1/2 tspblack pepper or to taste
  11. 1/2 cupcucumber, sliced
  12. 1/2 tspthyme
  13. 1/2 tspginger, minced(optional)
  14. 1/2medium carrot, thinly sliced
  15. 1hot pepper/pepper sauce to your level of spiciness

    In a deep dish/bowl, combine the brine ingredients, except the hot pepper, stir. add the bananas and pepper mix well, taste, adjust salt and pepper soak 30 mins before serving

  2. 2

    NOTE: the longer it soak, the better it taste and the more spicy and salty it'll be, so be cautious when adjusting the taste.

    To be eaten as it is or with bread
