Preheat oven to 425°F. In a medium cast iron or non stick skillet, melt butter over medium low heat. Set aside.

Combine eggs, milk, flour, light brown sugar, vanilla, and salt in a blender and blend until foamy. About 1 minute

In a small bowl, combine sugar and cinnamon. Pour batter into the skillet and evenly top with banana slices and cinnamon sugar mixture. Place skillet into the oven and bake for 20 minutes until golden and puffy.

Slice and serve with syrup.
