  1. dry bowl
  2. 400 gramsplain flour
  3. 2 tspbaking powder
  4. 2 tspsoda bicarbonate
  5. 1/4 tspsalt
  6. 60 gramschopped walnut
  7. 60 gramschopped dates
  8. 100 gramssultanas
  9. wet bowl
  10. 200 gramscaster sugar infused with vanilla pod
  11. 2 tbspsunflower oil
  12. 2 mediumsized eggs
  13. 300 mlfreshly brewed coffee
  14. loaf baking tray
  15. 1/2 tspoil
  16. 1/2 tspplain flour

Cooking Instructions

30 mins

    preheat oven to gas mark 7

  2. 2

    mix dry bowl ingredients

  3. 3

    beat eggs and stir into sugar. once mixed add oil.

  4. 4

    make espresso or other coffee of choice

  5. 5

    mix wet bowl into dry. add 100ml of coffee and slowly mix. add more coffee as needed until you get thick paste like dough

  6. 6

    oil and flour the loaf trays

  7. 7

    pour half mixture into each tray

  8. 8

    bake for 20 mins and then reduce to gas mark 6. bake for about an hour until thoroughly baked
