This recipe is great to use up egg whites. Additionally, you can also use a smaller loaf cake pan or double the recipe.

Preheat oven to 355°F.

Add whites and cream of tartar to a bowl. Whip the egg whites until stiff peaks form. It may take a few minutes for the peaks to form. Cold egg whites that have been sitting in the fridge are preferred for this step.

Add the sugar and vegetable oil to the Step 1 bowl, and mix. When mixed, add the dry ingredients about 1/2 cup at a time, and fold them in.

Grease pan with oil. Pour into the cake pan, and then sprinkle with chopped walnuts on top.

Bake for 20 - 30 minutes. Insert a toothpick or skewer and if it comes out clean, it's done.
