Ingredients

  1. 2 lbBroccoli, chopped
  2. 2 tbspButter
  3. 1Onion, diced
  4. 2 cloveGarlic, minced
  5. 2 tspDry mustard
  6. 1 pinchCayenne
  7. 1 tspSalt
  8. 2 cupChicken broth
  9. 2 cupBaby spinach
  10. 3 ozSharp cheddar
  11. 1 ozParmesan
  12. 1/4 tspBaking soda

Steps

  1. 1

    Sauté broccoli in butter.

  2. 2

    Add onion, garlic, mustard, cayenne, & salt.

  3. 3

    Cook 6 minutes.

  4. 4

    Add 1 cup water and soda, cook 20 minutes.

  5. 5

    Add 2 cups of water, broth and spinach.

  6. 6

    Cook on medium-high heat until spinach is wilted.

  7. 7

    Purée in batches.

  8. 8

    Add cheese, season, salt and pepper.
