Cooking Instructions

make sweet chilli sauce first
- 2
place chillies, garlic, salt and sugar in a mortar and pound until smooth
- 3
add fish sauce, rice vinegar and olive oil and mix well
- 4
stir in the spring onions, coriander and lime juice
- 5
pour into serving bowl

MAKE THE CRUST

put peanuts and chilli flakes with a pinch of salt into a mortar and pound until they look finely chopped

mix in the corriander

scatter onto a plate
- 10
place beaten eggs into shallow bowl and season with a dash of fish oil and pinch of salt

dip one side of fish into the egg and shake of excess

then dip into peanut mix

repeat for each steak

add a little oil to a hot frying pan and fry the steaks crust side down for 2-3minutes or until crust is golden

turn and cook for further 2-3minutes

remove from heat

slice steaks diagonally into 3

layer plate with lambs lettuce, cucumber and cherry tomatoes

lay the slice tuna steak on top of the salad

drizzle over the sweet chilli sauce

This is a sweet yet spicy tomato sauce that I like to add to my chilli. You could put it on anything you wanted too really but it's a really good fit when mixed into a chilli I think. If you don't want the sweetness to it simply substitute the 9 roma tomatoes with 4 beefsteak tomatoes and leave out the brown sugar entirely. Once I had chicken nanban somewhere that tasted like chili sauce...so I tried to recreate it using chili sauce instead of Nanban sauce.Fry chicken first over high heat with skin side down until browned. Then flip it over and put a lid on. Fry over low heat to get a better result.I used chicken breast this time. It turned out soft and filling! If you use chicken thigh, it will be juicy and delicious.
