2 1/2- 3lb beef chuck roast
1 tbspcooking oil
1 cupbeef broth
2 tspdried oregano
2minced garlic cloves
1/2 tspsalt
1/4 tspblack pepper
6chopped carrots
1onion cut in wedges
1/2 cupcold water
1/4 cupflour

trim fat from meat and brown

combine broth, lemon, oregano, garlic, salt, and pepper

pour over roast and bake covered in 325º for 1.5 hours

add carrots and onion
5

cover and bake 30-40 minutes or until tender
