Ingredients

  1. 2 ozPancetta/thinly sliced bacon,minced
  2. 2 lbBrussels sprouts (weight after outer leaves & stems removed
  3. 1 tbspExtra virgin olive oil
  4. 4 cloveGarlic, minced or sliced thin
  5. 1Kosher salt and fresh ground pepper

Steps

  1. 1

    Finely shred Brussels sprouts after washing. In deep heavy sauté pan, sauté pancetta/bacon on medium low heat until fat melts and pancetta becomes golden-about 5 minutes. Add olive oil and garlic and sauté until golden. Add shredded brussels sprouts, salt and pepper to taste and sauté on medium low for about 4-5 minutes until tender crisp.
