Ingredients

  1. 2Skinless Chicken Breasts
  2. 1Salt and Pepper
  3. 1 tbspOlive Oil
  4. 1 1/2Minced Garlic Cloves
  5. 1 pintsCherry Tomatoes, halved
  6. 5Chopped Basil Leaves
  7. 4 ozBuffalo mozzarella, sliced
  8. 1Balsamic Vinegar

Steps

  1. 1

    Salt and pepper both sides of chicken breasts and set aside

  2. 2

    In a large sauté pan over medium high heat, warm 1/2 tbs of olive oil. Add chicken and over pan. Cook for 10 min. Flip chicken and continue cooking until cooked through

  3. 3

    While chicken is cooking, in a medium sauté pan over medium high heat, warm remaining ½ tbs olive oil. Add garlic and cook for 1 min. Add tomatoes and continue sautéing until skin starts to wrinkle or about 5 min. Remove from head and skit in basil. Set aside

  4. 4

    Top each breast with 2 slices of mozzarella. Pour tomato mixture on top. Cover pan and let mozzarella melt. About 1-2 min

  5. 5

    Drizzle balsamic vinegar and serve
