2 cupPumpkin, diced and roasted
1Red onion, thinly sliced
3 cupBaby rocket, roughly chopped
1/3 cupDijon-style vinaigrette or salad dressing
1Toasted walnuts

Cook quinoa according to directions. Let cool slightly.

Add pumpkin, red onion, baby rocket and vinaigrette or salad dressing. Toss to combine. Garnish with walnuts.
