Ingredients

20 minutes
Makes about two dozen madeleines
  1. 1orange (zest of)
  2. 1/2lemon (zest of)
  3. 150 gramssugar
  4. 135 gramsbutter (melted)
  5. 3eggs
  6. 130 gramssifted flour
  7. 1/4 tspbaking power (if using non-self rising flour)

Steps

20 minutes
  1. 1

    Mix orange zest, lemon zest, sugar and melted butter in large bowl.

  2. 2

    Add the eggs while mixing.

  3. 3

    Fold in sifted flour (1/3 at a time) and baking podwer (optional). The key is to fold in flour lightly (not mix) until just combined.

  4. 4

    Spoon batter into buttered maleleine tray. Fill each mold a little bit below the rim.

    Cook at 180 C for 10-12 min or until edges are golden brown.
