This is my mother's madeleine recipe that she often made for my family growing up. The recipe is so simple that it can be made in about 20 minutes (including cook time). My record is 18 minutes!

This is my mother's madeleine recipe that she often made for my family growing up. The recipe is so simple that it can be made in about 20 minutes (including cook time). My record is 18 minutes!

Mix orange zest, lemon zest, sugar and melted butter in large bowl.

Add the eggs while mixing.

Fold in sifted flour (1/3 at a time) and baking podwer (optional). The key is to fold in flour lightly (not mix) until just combined.

Spoon batter into buttered maleleine tray. Fill each mold a little bit below the rim.

Cook at 180 C for 10-12 min or until edges are golden brown.
