We saw another recipe here - which we tried, but it was very bland to our tastes. We experimented a couple times and came up with a new and improved version for people who like a bit more spice with their casseroles. Spice to taste, but be liberal according to what you think might appeal to you.

Ingredients

8 servings
  1. 1/2 PackageWhole Wheat wide Noodles cooked per directions
  2. 1large can Chunk Chicken (or Tuna of you prefer)
  3. 1 CanCream of Mushroom Soup
  4. 1 CanCream of Celery Soup
  5. 1 CupFrozen Peas
  6. 1Small Red Onion (diced fine)
  7. 1/2 TspSalt
  8. 3 TbsCoarse Ground Black Pepper (divided, and to taste)
  9. 1 TbsCrushed Red Pepper
  10. 3 TbsCajun Spice (divided and to taste)
  11. 3 TbsGiardiniera
  12. 1 CupBread Crumbs (divided and to taste)
  13. 1.5 CupMonterrey Jack Cheese shredded (divided and to taste)
  14. Cajun Spices to taste  (likely about 2-3 Tablespoons spread over layers)

Cooking Instructions

    Preheat oven to 375 degrees.

    Cook the Whole Wheat wide noodles per package instructions

  3. 3

    Spray your baking pan with non stick spray such as PAM or canola oil.

  4. 4

    Mix the Canned Chicken, Cream of mushroom soup, Cream of Celery Soup, Frozen Peas, Red Onion, Giardinera, and Bread crumbs in a separate bowl.

    Once the egg noodles have cooked, put half of the egg noodles in the baking pan, and cover them with about half of the mixture from step number 4.

    Cover the remaining noodles and mixture with cooked Egg Noodles. Then cover that with the remaining Chicken, Soup, Peas, Onion and Giardinara mixture. Cover this liberally with Monterrey Jack Cheese. Add coarse black pepper and Cajun Spices to taste.

    Bake the casserole for 30 minutes at 375 Degrees. Serve in bowls.
