While noodles are still in package, press down on them to crush into small pieces. Add the pieces to a bowl.

In a food processor, add the ramen spice packet, grated ginger, garlic, lime juice, oil, sugar, and soy sauce. Process until well blended and add to the bowl with the noodles.

Thinly sliced the cucumber and cut the slices in half. Add the cucumber, broccoli slaw, and chicken to noodle mixture.

Arrange on a platter and top with mandarin oranges. Serve.
