I love quiche but hate the idea of putting down a pastry and making an entire pies worth of it. This simple receipe makes it very easy to have egg muffins and is easy to transport and put together later for lunch as well.

I love quiche but hate the idea of putting down a pastry and making an entire pies worth of it. This simple receipe makes it very easy to have egg muffins and is easy to transport and put together later for lunch as well.
Steps

Preheat oven to 400°F
- 2
whisk eggs, milk, baking soda, and flour together in a wet measuring cup or similar container with a spout for easy pouring

line two or more small loaf pans with bacon, covering the sides and the bottom. best to slice each piece in half so they lay flat

Add cheese and any other desired vegetables such as onions and green peppers
- 5
Add the egg mixture to pans. leave at least 1 cm of room from the top to allow for expansion while baking
- 6
bake for 20 or more min. to test if it is done, insert clean butter knife in middle; it should come out clean aside from some steam
- 7
pull out of oven and allow to sit for at least two minutes. run a butter knife along the inside edge of pan to loosen anything that is sticking. allow to cool for another 5 min before putting pan on its side and easing quiche out

cut loaf into pieces and add to muffins or buns as desired
