Girlfriend wasn't feeling great so she requested soup. This is what I made her because this is what we had in the house. The soup is vegetarian but not vegan because I thickened it with a butter roux but you can use vegan butter, a corn starch slurry, arrowroot, etc., if you prefer.

with all that cold weather I was in need of a comforting but healthy soup. So I came up with this :)

Just used what I had

This is my go-to dish when my coworkers are sick. I use lots of garlic, oregano, and fresh root vegtables...whatever looks good at the store or farmers market. Emulsion blender is used in this recipe. Sometimes i add a dash of wine or cayenne and even garnish with roasted corn. Both sour cream and salsa can be served with soup.

I love soups. When making anything, I try to use as much fresh as possible. Especially Vegetables. Vegetable soup is one of my favorites. I would love to be able to always have it made so I could grab a soup mug or bowl full whenever I like. I always make 5-7 quarts of soup. I keep some out, place some in sandwich Ziplock baggies. This baggy makes one full bowl of soup.

Needed something light, warm, and easy. This was perfect! Yum yum yum.

#GlobalApron 2024 week 38 ingredient onion. I love homemade soup. It is so much better than canned. After cooling I measure 4 cups and put in gallon zip lock bags.. I lay them flat on a sheet pan and freeze. They take little room in the freezer and thaw quickly. There really aren’t measurements for this recipe. You can make a small batch or be like me and end up with 16 quarts.

Never a bad time for soup!

Girlfriend requested soup to get over a mild case of food poisoning. Didn't have any in the house so I made this. I usually thicken soups with a roux but her doctor said no dairy so I used corn starch instead. It didn't suck so I thought I'd share it.

This recipe came about one night when I really wanted soup but didn't have a lot of time to make it. Now we have it all the time and it is my 4 year olds favorite soup.
