Bigmama only made this cornbread on the 1st Sunday of every month. When she pulled out that old iron skillet on 1st Sunday morning, everyone was happy because we knew we were having Golden Cornbread! Ooooweeee! Lip smacking southern goodness!.

Ingredients

Cast Iron
  1. 1 tablespoonvegetable oil
  2. 2 Cupsyellow cornmeal (I used Martha White)
  3. 3/4 cupself rising flour
  4. 1/4 cupgranulated sugar
  5. 2large eggs
  6. 1 cupmilk (I used buttermilk) plus more as needed
  7. 1/4 cupvegetable oil
  8. 1 stickbutter, melted

Cooking Instructions

    Place 8 or 10 inch Cast Iron skillet in the oven. Add tablespoon of vegetable oil to the skillet. preheat the oven to 400 degrees.

    In a large bowl whisk all the dry ingredients together.

    Dump in all the wet ingredients and mix well to combine. Mixture should be creamy and pourable but not too thin. NOTE: if mix is too thick just add a tiny bit more milk until you get the right consistency.

    Increase the oven to 425 and pour the cornbread mix into the iron skillet. Bake 25 minutes or until golden and done.

    Be safe and careful in the kitchen!
