This recipe is actually my version of a certain restaurants pasta dish. It's easy and quick to make and it's really tasty. I use my homemade cajun/creole seasoning ( https://cookpad.wasmer.app/us/recipes/2997167-homemade-cajuncreole-seasoning ) to make this up, so if the seasoning you use has a lot of heat to it, you may need to adjust the amount you add.

Ingredients

6 servings
  1. 1/2 cup+ 1 tbsp. unsalted butter, divided and cubed
  2. 2 cupsheavy cream
  3. 4 oz.brick style cream cheese, sliced into cubes
  4. 2 clovesgarlic, minced
  5. 1large tomato, diced
  6. 3 tsp.Cajun seasoning, divided
  7. 1/4 tsp.each black pepper, onion powder
  8. 1/2 cupfreshly shredded parmesan cheese
  9. 1/2 cupfreshly shredded gouda cheese
  10. 1 lb.penne pasta (or other shape)
  11. 1 lb.shrimp, peeled and deveined

Cooking Instructions

    Place a large pot of water over high heat. Once it comes to a boil, cook the pasta according to package directions and drain it. Return the drained pasta to the pot and set it aside.

    While waiting on the water to boil, in a large, deep skillet, heat the 1 tbsp. butter over med-high heat. Once it's melted, add the shrimp. Season it with 1 tsp. of the cajun seasoning and cook until it is pink and opaque. Remove it to a plate, cover the shrimp with foil and set it aside.

    Place the cream, the 1/2 cup butter and the cream cheese into the same skillet. Whisk it together often while it all melts.

    Once the butter and cream cheese are melted and smooth, whisk in the remaining 2 tsp of cajun seasoning, the pepper, the onion powder, the garlic, the tomatoes, the parmesan and the gouda. Whisk until the cheese melts completely.

    Allow the sauce to simmer for 5 or so minutes, to thicken up. Then combine the sauce and the shrimp with the pasta in the pot. Toss everything together until it's all incorporated.

    Serve immediately and enjoy. Refrigerate any leftovers.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
