Kesari Rice with chicken fry and mutton kosha

My spread for the Valentine’s Day Special will a dinner with our (me and my hubby)favourite dishes. I will prefer for quality of menu rather than the quantity or number of items. The more I make variety items, the less I will give time to my Valentine as I will be busy with my kitchen stuffs.
So a simple kesari rice (my favourite) with mutton kosha (both’s favourite) and chicken fry (his favourite). Kesari rice or saffron rice is not a sweet one, a normal version with the flavour and richness of kesar.
This arrangement was done by me on my husband’s last birthday. He was very happy 😃 to see such decoration on the terrace with the lovely dinner. ❣️😍

Marinate mutton for minimum 30 minutes with onion paste, 2 tablespoon of ginger garlic paste, cumin coriander powder, potatoes, 1 tablespoon of red chilli powder salt, turmeric powder and mustard oil.

Heat oil in a cooker and temper whole garam masalas and 2 onions sliced.

Add the marinated mutton in it and sauté nicely for 10 minutes or till the masalas leaves oil.

Add water 1 and 1/2 cup and cover the lid. Give 3 whistles and the mutton will get cooked.

Reduce the gravy to a semi dry of your wish. Mutton kosha is the dry one. If you need it be a gravy one then let it be like that

For Kesari rice, boil rice and keep aside. Heat a pan with ghee, add cardamom and a bay leaf in it. Add the cashew and raisins are sauté them. Add the rice and soaked Kesari in it with sugar and salt. Sauté for few minutes and your instant Kesari rice is ready.

For the chicken fry, marinate the chicken pieces with ginger garlic paste, pepper powder, salt, turmeric powder for 10-15 minutes.

Add all purpose flour and corn flour to it and deep fry them in a kadai in medium low flame till golden in colour

Serve hot and crispy
