Tropical Banana Bread

I had some bananas at home that were going bad, and had just gotten mangos and pineapples at the farmer's market that day, so I decided to make my own tropical version of banana bread, as I couldn't find a recipe I liked online. My hubby is diabetic, so I ended up tweaking a basic recipe I had found online by halving the amount of butter it called for, and adding coconut sugar (and less of it) for regular white sugar. Didn't have raisins, so I used prunes and added extra fruit..figured if my hubby ate this recipe, it would not only increase his fruit intake, but keep him regular too! LOL...You could probably add nuts if desired, but I didn't have any on hand. Enjoy!!

Ingredients

  1. 1/2 cupbutter
  2. 1 cupcoconut sugar
  3. 3eggs
  4. 3 cupflour
  5. 1 tspbaking powder
  6. 1 tspbaking soda
  7. 1/2 tspsalt
  8. 1/2 tspcinnamon
  9. 1/2 tspnutmeg
  10. 2bananas
  11. 1/2 cupprunes, chopped
  12. 1medium mango, chopped
  13. 1/2 cuppineapple, chopped

Cooking Instructions

    Cream butter, sugar, add eggs and mix until smooth.

    Mix dry ingredients together and mix alternately with chopped fruit and mashed bananas.

    Pour into greased and floured 1 1\2 quart loaf pan, and cook about an hour at 350°F, or until a toothpick inserted comes out clean and/or is golden brown. Will make about 8 to 10 big slices. If you like, you could probably make these in a muffin tin, also.
