  1. 1 tbspOlive Oil
  2. 1Salt
  3. 1Pepper
  4. 8 ozSun Dried Tomatoes
  5. 12 ozRotini Pasta
  6. 1 lbItalian Turkey Sausage
  7. 3 cloveGarlic-minced
  8. 8 cupBaby Spinach - I get the ready to use bag of spinach.
  9. 1/2 cupParmesan cheese

Cooking Instructions

    Prepare pasta as directed on the box.

    Meanwhile, In large skillet brown sausage, breaking it up into small pieces. Stir in minced garlic.

    After sausage is browned start adding spinach, stirring often, until it all wilts.

    Then add sun dried tomatoes and stir until all is warmed.

    In a bowl put the parmesan cheese, salt, and pepper.

  6. 6

    When pasta is ready to be drained, save half a cup of the cooking liquid. Add this and the olive oil to the bowl of Parmesan cheese mixture.

    Whisk until smooth.

    Pour over the paste and toss to combine.

  9. 9

    Serve the pasta topped with sausage mixture.

  10. 10

    Sprinkle more parmesan cheese on top before serving.
