Chocolate Banana Cake Eggless
ran out of eggs but wanted to make a cake so came up with this. Thinking it would come out stodgy but it's so light and fluffy

sieve the flour, baking powder and salt together
- 2
separately combine the bananas, oil, water, sugar and vanilla extract
- 3
gradually add and mix the wet ingredients into the dry until lump free
- 4
fold in the chopped chocolate (and apricots if using)
- 5
pour mix into a greased tin and bake in a preheated oven at 180°c for about 40-45mins until a skewer comes out clean
- 6
serve while still warm with a scoop of vanilla icecream
