Ingredients

10 servings
  • For the sauce:
  • 2.2 lbsripe Roma tomatoes (about 1 kg)
  • 3whole black peppercorns
  • 1garlic clove
  • 1bay leaf
  • Salt to taste
  • 1/2 teaspoonground cloves
  • 1/2 teaspoonground cumin
  • 1 teaspoonwhite vinegar
  • For the sandwiches:
  • 5crusty Mexican rolls (birotes salados)
  • 2.2 lbscarnitas (pork shoulder or ribs, about 1 kg)
  • Refried beans

Steps

  1. 1

    Boil the washed and cleaned tomatoes until soft.

    Once cooked, remove the tomatoes and peel off the skins.

    In a blender, add the garlic, bay leaf, salt, cloves, and cumin first.

    Add the peeled tomatoes and blend until smooth.

    Pour the sauce into a deep bowl so you can dip the sandwiches.

    Shred the pork, which you will use to fill the rolls.

    Slice each roll in half without cutting all the way through. Spread refried beans inside, then add the shredded pork.

    Dip the sandwiches in the sauce and serve.

    Optionally, top with sliced onions marinated with plenty of lime juice, salt, and oregano.
