
Parmesan & herb crusted Italian bread

Warm buttermilk in microwave for 40 sec.it should be warm to the touch.

Add honey and mix

Add yeast and let sit for 30 min.

While yeast is proofing sirft flour three times. this should bring the volume up the 3 whole cups.

Add kosher salt and sift one last time

Once yeast proofs add 2 whisked eggs, and with a fork gently mix yeast and eggs.

Mix both wet and dry ingredients in a stand mixer untill its all well incorporated. If dough does not incorporate all flour add more water by the spoon full. Until it all comes of the sides

Once dough has been well incorporated ,knead dough 15 times or set for 5min. on medium , on a stand mixer. Take the kneaded dough out of the bowel and wash bowel well. Make sure to run bowel under hot water for 3 min. Dry bowel and pour oil inside, then put dough inside bowel. Turn dough and coat all sides. Once well coated cover bowel with clean towel and let stand, for 40 min., in a warm place.

Pre heat oven at 375°.Place cast iron pot in oven to warm. for a few min. while you punch down the risen dough. Dough also needs to be kneaded for 5 min.. Once dough is ready pull cast iron pot out of oven and place dough inside. Stretch dough to fit pan and brush with egg white. Combine grated Parmesan cheese and dryed Italian herbs.Sprinkle cheese mix atop of dough and let proof once more in a dry warm place.

Once dough has risen again place in oven and bake for 30min or until lightly golden brown on top. Tap bread with spoon and you should hear a slightly hollow sound.

At this point break is ready to come out of oven. Carefully remove pan out of oven and flip bread onto cooling rack. Let stand until bread has cooled.
