Steps

Preheat oven to 400°F Fahrenheit.

Take fillets and dab all sides with a paper towel.

Brush fillets with vegetable oil.

Mix salt and pepper together in a bowl and coat fillets on all sides.

Sear fillets in pan on stove top for 2 minutes on every side.

Place pan of fillets into oven. Use thermometer to tell when done. 125-130 degrees = mr ; 130-135 degrees = m ; 135-140 degrees = mw

Take fillets out and put on a plate, cover with foil and let sit for 5 minutes.
