Jean's Cauliflower au Gratin

Had a head of cauliflower to cook but couldn't find a recipe I liked, so I came up with this! It is delicious and you can exchange ingredients. You can also put it in a casserole dish with some bread crumbs and cheese on top and crisp it up! :)

Had a head of cauliflower to cook but couldn't find a recipe I liked, so I came up with this! It is delicious and you can exchange ingredients. You can also put it in a casserole dish with some bread crumbs and cheese on top and crisp it up! :)
Steps

Put water, cauliflower, garlic and onion in saucepan. Cover and simmer until near tender.

Once close to tender, carefully drain off most water. Add milk, stir.

Add butter, half of cheddar cheese, and half of bread crumbs, stir well until cheese is melted.

Add other half of cheddar cheese and ricotta, stir well until melted. Add other half of bread crumbs and seasonings of choice.

Simmer 5-10 minutes, until sauce is thick enough for you. If needed, add a pinch of flour.

If desired, add sweet peas at the end of simmering. If they are frozen, add them 5 minutes before done.
