Ingredients

  1. gumbo but minus the rice
  2. 1 1/2 lbsausage, I used four star from Georgia
  3. 12 ozshrimp deviened tail off
  4. 7 ozcrab meat, looked over for shell pieces
  5. 2 tspcayenne pepper powder
  6. 1 largebell pepper, chopped coarsely
  7. 1 largeonion, chopped coarsely
  8. 1 cantomato sauce (15 ounces)
  9. 2 canokra and tomatoes, I used Gloria Harvest (15 ounces each)
  10. 2 tbspfile
  11. 2 tbspminced garlic
  12. 2 tbspsalt
  13. 2bay leaves (laurel leaves)
  14. 2 tbspground black pepper
  15. 1/3 cupall purpose flour
  16. 3 cupwater
  17. 2 stalkscelery chopped 3/8 (9mm) in length
  18. 1/2 cupbacon fat rendered
  19. 1/2 stickbutter (2 ounces)
  20. 2 tbspworchestershire sauce
  21. 2 tbspwhite distilled vinegar
  22. rice
  23. 5 cupslong grain rice
  24. 1 1/2 quartwater
  25. 2 tbspcayenne pepper powder
  26. 2 tspsalt
  27. 2 tbspground black pepper
  28. 1 canchicken broth or beef your choice (15 ounces)
  29. 1/2 stickbutter

Steps

  1. 1

    Bring spices for rice to boil in water, butter and broth. Add rice, stir well and let boil till liquids are just above the top of rice. Stir good, let boil till liquids are bubbling out from craters in the rice. Cover, remove from heat. Do not remove the lid minimun 20 minutes

    Heat bacon fat butter in pan add sausage, onions, pepper, and celery let cook till it starts to sweat. Add flour.

    Let cook for 4 minutes. Add okra and tomatoes, and spices. Add water, bay leaves, add rest of ingredients

    Let cook, stirring occasionally, for 20 minutes. Add rice, cover for 30 minutes.
