Ingredients

  1. 1octopus, about 3 1/3 pounds (1.5 kg)
  2. 1 cupwhite wine
  3. 1bay leaf
  4. 1-2 clovesgarlic, finely chopped
  5. 1 cupvinegar
  6. 1 cupolive oil
  7. 1/2 bunchparsley, finely chopped
  8. pepper
  9. 1/2 teaspoonoregano

Cooking Instructions

    Wash the octopus well and place it in a pot with the wine, half of the oil, half of the vinegar, the bay leaf, and the pepper. Boil until tender, about 40 minutes on low heat. Don't worry if the liquids seem insufficient; the octopus will release plenty of its own.

    Remove it to a platter and once it cools, cut it into pieces.

    In a salad bowl, mix the octopus with the remaining oil and vinegar, add the garlic, parsley, and oregano. Taste and add a little salt if needed.
