
Greek Yogurt Mac And Cheese

Cook the pasta according to packet directions

Preheat oven to 400°F

Heat olive oil in medium saucepan over a medium heat until it is shimmering

Add flour into pan and stir briskly to form a roux. Let the roux cook for a minute constantly stirring

Slowly pour in the milk stirring constantly.

When the sauce is smooth add the salt and pepper and 3/4 cup of cheese (Monterey Jack)

Stir until cheese is melted and the mixture is smooth

Remove from heat and let the cheese cool slightly before adding the Greek yogurt

Whisk cheese and yogurt together until it forms a smooth mixture.

With the pan still off the heat, add the cooked pasta and 1/2 cup of the cheddar cheese to the sauce. Stir with a spatial until all pasta is covered with the cheese sauce

Pour mixture into a greased baking dish

Top with remaining grated cheddar cheese and Panko breadcrumbs

Bake for about 10 minutes. Until cheese is melted and golden
