  • 600 gramsSchlagsahne
  • 350 gramsMandelmilch
  • 65 gramsXylit oder Erythrit
  • 1Vanilleschote
  • 1/2TL Zimt
  • 1/2TL Muskatnuß, frisch gerieben
  • 6Eier

Steps

  1. 1

    Schlagsahne und Mandelmilch in einen Topf geben

  2. 2

    Vanilleschote auskratzen. Mark und Schote zur Sahne geben.Zimt und Muskatnuss zur Sahne geben.

    Milch Sahne Mischung langsam erhitzen und zum simmern bringen, dann vom Herd nehmen.

    Süßstoff und Salz zur Mischung geben und solange rühren, bis der Süßstoff aufgelöst ist.

    Eier in einer separaten Schüssel schaumig schlagen.

  6. 6

    Milch Sahnemischung unter ständigem Rühren LANGSAM zu den Eier geben. dabei immer nur etwas Milch zu den Eiern geben und rühren, bis alles integriert ist. Erst dann mehr Milch zufügen.
    Sobald alle Flüssigkeit in der Eiermischung ist, alles zurück in den Topf geben und auf kleiner Hitze erhitzen, biss der Eggnog dicker wird (75-80°C). Auf keinen Fall Kochen!

    Eggnog durch ein Sieb streichen und kühl stellen. Mit frischer Muskatnuß oder Kakao bestreut servieren. Die Erwachsenen dürfen auch einen fingerbreit Bourbon oder Rum unterrühren...
