Ingredients

  1. 1whole chicken
  2. 1 mediumonion
  3. 1 largegreen pepper
  4. 3 clovegarlic
  5. 1 cupdry Jerk Seasoning
  6. 1 cupolive oil
  7. 1/2 cupwet Jerk Seasoning
  8. 1Salt to taste
  9. 115 oz can chopped pineapples

  1. 1

    Place Chicken in Large Bowl. Add Sliced Onions and Peppers.

  2. 2

    Add Garlic, dry Jerk seasoning, and Salt to chicken generously. Allow to rest in fridge for 1 hour (overnight for spicier flavor)

  3. 3

    Remove chicken from fridge and ADD olive oil and WET Jerk Seasoning.

  4. 4

    Place in Large Roasting Pan. Roast on High Temp. 450* for 10-15 mins UNCOVERED.

  5. 5

    Chicken should begin to brown. Lower Temp. to 300 and COVER. Continue to bake for 30 min or until chicken is completely done.

  6. 6

    Remove from oven, Pour Pineapples (juice included) over chicken.

  7. 7

    Cover and allow to rest for 10 mins then SERVE.
