Sieve the almond four and the icing sugar in a bowl

Now get a different bowl and mix the three egg whites till they turn like a whipped cream consistency. Make sure the eggs are room temperature.

Slowly add 4 tablespoons of regular sugar into the egg whites. Mix until the mixture becomes hard. Mix this with an electric mixer

Next add the almond and icing sugar concoction to the egg whites and regular sugar and fold the mixture softly do not over mix it or under mix it.
