2 packagesTofu shirataki or rice noodles
1Onion
1Green onion
1Oil
3/4 canCoconut milk
1/2 cupDiced tomatoes fresh or canned
6 tbspNatural peanut butter
2 tbspGinger, finely diced
2 tbspGf soy sauce
1 tbspFresh lime juice
1 tsp1 1/2 curry powder
1 tspSiracha

Prepare noodles according to pkg directions

Add all sauce ingredients to a pot on med high heat until simmer and then remove

Put a splash of oil in sep pan. Add veggies to soften. The tomatoes and celery and carrots if wanted.

Add noodle and sauce to veggies. Toss to coat.

Top with slices of green onion.
