Ingredients

  1. 2small cans sliced mushrooms or (1-pkg. fresh)
  2. 1 lbCooked sausage
  3. 2 canChicken broth
  4. 1small chopped onion
  5. 1 dashGarlic powder (optional)
  6. 1large Bell pepper sliced
  7. 6large Sliced carrots
  8. 3 tbspCajun seasoning (more for spicier)
  9. 1 canUn-cooked Parboiled rice

Steps

  1. 1

    Preheat oven to 400°F.

    Fry the sausage and remove from Grease.

  3. 3

    Prepare carrots, mushrooms, peppers and onions.

  4. 4

    Spray 11 x 15 baking pan with Pam and pour in 1 can chicken broth.

  5. 5

    Measure empty broth can full of rice and spread evenly into broth filled baking dish.

  6. 6

    Layer sausage and vegetables on top of rice.

  7. 7

    Sprinkle 1/2 of seasoning on top of the vegetables and pour on the last 2/3 can of broth.

  8. 8

    Add remainder of seasoning.

  9. 9

    Bake uncovered at 400°F for 1 hour. Serve hot.
