Heat the milk in a pan with the vanilla extract, then remove from the heat.

Beat the egg yolks and sugar in a large bowl, add this mixture to the rest of the warm milk in the pan and whisk over the heat for 3-4mins or until thickened and smooth. Remove from the heat and leave to cool.

Fill the cooked pastry case with the custard. (Was the green bit) and slice the strawberries and arrange on top of the custard.

Brush with the warm apricot glaze. Decorate with extra fresh fruit and glaze again. Chill before serving

Serve with one scope of vanilla ice cream
