Ingredients

  • 1 largeOnion yellow
  • 8 ozPortobello mushroom
  • 3 mediumRed peppers
  • 1 headGarlic
  • 2 largeEggplant
  • 2 largeZucchini
  • 1 canHunts crushed tomatoes, basil
  • 1 largeEgg
  • 8 ozRicotta cheese
  • 4 ozMozzerlla
  • 1/2 bunchParsley fresh
  • 1/2 bunchBasil fresh

Steps

    Slice eggplant and zucchini, salt and toss on grill. Mix ricotta, mozzarella, parsley, and egg in a bowl and set aside. Dice, toss, salt and pepper the onion, red pepper, and garlic in a pan and sauté, add mushrooms after a few minutes. After a few more minutes add tomatoes and let simmer, adding in basil a couple of minutes before finish. Layer you baking pan eggplant, sauce, eggplant, cheese mixture, zucchini, sauce and bake for 20-30 minutes at 350
