Vegetable soup
Nice winter warmer to use up leftover veg and feed the family

You can pick whatever veggies you have. I cut mine into chunky pieces, no peeling just chop, put in a large oven dish and add a little oil and seasoning and place in a preheated oven at 180 degrees for around an hour or all or the vegetables will squash with a fork.

Blitz the mixture with a hand blender or blender if you want.

Add in 1 litre of vegetable stock and a tin of coconut milk and season again and stir well. Serve with bread. Really tasty, economical and reduces food waste as well as being perfect to freeze in portions.
