Ingredients

12 servings
  1. 1 boxCarrot Cake Mix
  2. 1 can15 oz. Pumpkin Puree
  3. 1/4 cupapplesauce
  4. 1/4 cupwater

Steps

    Pre-heat oven to 350°F.

    Line muffin pan with paper muffin liners

  3. 3

    Simply mix all ingredients until just combined.

  4. 4

    Drop batter into muffin pan – filling each muffin cup to 2/3 full.

  5. 5

    Bake for 20–22 minutes.

  6. 6

    Check for doneness using a knife inserted in the center of a muffin. If it comes out clean, the muffins are finished. If not, cook for a few minutes longer and check again with a clean knife. Makes about 18 muffins.

    Store and Save for later:

    Pantry: Store in sealed container for 1-2 days.

  9. 9

    Refrigerate: Store in sealed container for 1 week.

  10. 10

    Freezer: Store in sealed container or heavy-duty freezer bag for 1 month.
