Tomato and Courgette Bake
A vegan and tasty lunch/ dinner that’s quick and easy to make.
Steps

Chop courgettes and place into a baking dish. Drizzle olive oil, sprinkle salt and pepper. Place into the oven on 190.

Chop peppers, onions and mince garlic. Fry with a little oil until softened.
- 3
Stir in peas, sweetcorn, beans, chopped tomatoes and purée. Stir in sugar and stock cube. Bring to boil.

Add the tomato and veg mix to the courgettes. Consistency should be loose, add ½ cup water if not.

Bake for 30 minutes. Stir once or twice throughout.
